Will applying for WIC affect me when I decide to sponsor my parents in the future?

I guess it depends on timing.   They could question how you would be able to afford to support new immigrants if you can’t afford basics for your own family.

WIC is not considered a public charge. You could sponsor your parents but your current income at parent's interview is what will count.

My parents’ interview is not until October. Since it not considered as a Public Charge, it’s not going to affect my sponsorship in the future, correct?

How do parents of an LPR get sponsored by someone who is neither a U.S. citizen nor an LPR?

Well, they are applying for B1/B2 for now to help me get through my postpartum. I won’t be sponsoring them or applying for their GC until I get my citizenship which will be in like 3-5 years.

Your status is not clear to me, so it's impossible to reply. What is "waiting for interview for permanent residence" ? Are you in the US on a spousal visa and waiting for delivery of your green card?  Are you in the US on some other kind of visa and you have applied for a green card?  Some specifics would help folks understand better.

Your question is wrong.

Your question should be "will me and my husband being on food stamps affect my eligibility for a green card?". The question is who is YOUR sponsor? 

 

On the other hand, you are not sponsoring your parents with their B1/ B2. There is no such thing. They will apply in their own merits.

 

Coming to help you with a new born should be the answer when they ask "what is the purpose of your visit?" and yes, they'll likely be denied.

There is no sponsorship or public charge for a (nonimmigrant) for a B visa.   
 

It will be many years before they could come on an immigrant visa, so maybe you’ll be in a better financial position to sponsor them by then.

Op, ah so you saying sponsoring you were not talking about the eventuality of sometime in future becoming a citizen and petitioning+sponsoring your parents? You are talking about B2 visitor's visa? 

All the same, you should not worry about the WIC as it has nothing to do with your parents' tourist visa application. They apply on their own merit; nothing to do with you and you can't sponsor them for a B2 visa.

OP, the way you phrased things, the whole plan hinges on your parents coming to the US on a visitor visa to "help you with postpartum" and then waiting until you become a citizen so that you can apply for their GC. Obtaining a non-immigrant visa to enter the country with immigrant intent is illegal. Don't do that.
