Just a side note, since you mention using 3 cars as part of your assets: 

 

What can be used as assets?

Financial sponsors can only include assets that are convertible into cash within one year and without considerable hardship or financial loss to the sponsor and his/her family. Examples of assets easily convertible to cash are savings, stocks, bonds and property. Sponsors may include the value of their home. They may not include the value of their automobile, unless they can show they have more than one and the primary automobile is not included as an asset.

So your primary vehicle would not be an asset, and based on the wording here the additional cars likely need to be paid off to qualify as well. (I doubt a car with an active lien from a car loan would count as an asset)

I do have my 2021 transcripts but I have my reasons as to why I don’t want to use them. That’s why I was asking if I could use other income or assets instead of using my taxes 

Sorry,  you can use assets to help suppliment the income but you must still submit tax transcript(s)/  it is a requirement

The house can also not be the house they will be living in.

they new instructions changed this

they have to prove they can liquidate it in a year (how someone does this i have no idea )

but it can be used 

 

under the old I 864 instructions  we couldn't use our primary residence
