Its happened from time to time.  Usually it just results is a slight delay in the issuance of the visa.

Asking because this is our story.

My gf works overseas, so she only has 2 weeks vacation in Ph, so our plan is to get the medical on day 2 and 3 of the vacation, then interview on day 4, all aiming to get her visa before she leaves for work again on day 13th, even if her visa is not delivered by then, thats ok with us as the plan is for her to come to the US on November, but if we can accomodate the whole process in the 13 days that will better for us.

So to resume, can her interview be cancelled if the medical results are not in at Consulate, at the time of the interview?

Planning to accomplish 'anything' on a strict tight schedule in the Philippines is full of pitfalls.  In general, it's a 'tight schedule averse environment'.  If she successfully completed and passed her physical at Saint Luke's, but Saint Luke's failed to transmit it to the embassy on time.  The interview would likely still go on, with visa issuance pending resolution of the delay that was caused by Saint Luke's.

Doing it all in 13 days is quite possible, not at all unrealistic, but,,, hardly guaranteed.  Delay of transmission of passing physical results from Saint Luke's to the embassy on time is far from greatest risk to success.

Any reason your gf is not applying for her K1 visa at the US consulate in the country where she works?

When we started the process, we thought she will be done with her employer by the time the Consulate had her application, but due to covid her employer decided to give her the job indefinitely with the only requirement that she lets her employer know at least 3 months prior her resignation, so plan is that she is staying until October 31st then fly back to PH to sort everything out then later on NOV flight to US.

We are fine with the Visa being delay(i mean, not that we wanted it to be, but as plan B it works), it will be delivered to her family home in Manila anyways, we were just concerned if we had to wait until the consulate get her medical exams or no, like we didn't wanted to book an interview then being told " gotta reschedule because not SLEC result yet, and then not having spots open ro reschedule within the 13 days window.

Good luck with the SLEC x-ray machine lottery.  It would have been less risky for your gf to apply for her visa where she doesn't have to deal with SLEC.

You need to do more reading, an NBI clearance can be secured from outside the Philippines for those living abroad.   Just a few extra steps, a couple of hoops.
