I filed an I-130 in September

I live in Japan with my wife of 4 years.  The nearest consulate is Tokyo.

My current job contract ends in March.  I got word that the company will not be renewing my contract.

We have a 1 year old with a C.R.B.A. and a US passport.

Wife stopped working 3 years ago.

Her only family is her mother, who is taking care of grandmother.  they also don't get along sometimes, and the apartment that her mother and grandmother lives in is always dirty.

She has been diagnosed with Bi-polar disorder and is seeing a Dr.

She has been looking for a job, but has not been able to find anything.

Its not really possible for me to get another job.  If I was able to find a new job, I would have to take a reduced salary, and move my family.

Our savings is not enough to last the year or so it would normally take to get her visa.

what are my chances of getting approved for an expedited request?

What evidence would I need to file an expedited request?

I am assuming that I can not quit my job.

Requesting an expedite is just part of the process now, not sure you have a solid chance but by all means have a go. It is free,

Taking a positive aspect expedites help but cannot see anything happening by March even if approved all the way through so definitely have a Plan B.

Unexpected job transfer to the US is a common reason to expedite.  If you are not transferring and do not have ongoing income when you move to the US your hurdle will be the I864

I did this (from Vietnam) and got our visa in 3 months.

Get a job offer in USA and use the offer as the basis to file for expedited visa. I wrote a letter explaining my financial status along with the job offer letter and my letter of acceptance. I included that in my I130 application at the local consulate.

Sounds like you haven't filed anything yet. You situation might be enough for the Immigrant Visa Unit in Tokyo to accept a "Direct Consular Filing".  See their website for how to make such a request.
