Yes.

The letter of intent to marry is only as good as the date it was signed.

You can include a letter of intent to marry in the I-129F filing, and include another letter of intent to marry for the interview.

Relationships do change over the course of waiting on the K1 process, so having updated letter of intent to marry doesn't hurt.

The original is not needed, which is good because mail between sone countries or even within some countries is time consuming or unreliable. 
 

Instead, the alien fiancé(e) can print or hand write a letter of intent  to  marry, sign / date it, take a digital photo of it, and email / message it to the U.S. citizen petitioner. The petitioner then prints the photo and includes it in the I-129F

 

For the interview, do the converse.
