You are on point, but I don't have a line of eager people to help me sponsor, so I took what I could. For me it's most important to make it past NVC, because I'll probably be returning to the US and starting a job a few weeks before my wife's interview, so in case of problems I could give her my new I-864 with recent pay stubs, etc.

Am I right calculating both employment and self-employment income like that? I know that self employment income should be taken from line 31 Schedule C from last year, but for the employment part, I don't have to use the last year's income but can use the current year's one?

From your first post, your joint sponsor is married and his spouse has income.  State both incomes combined and have the spouse provide an I-864a.  I told you that in my first response in this thread.

Yes, I remember your advice, but for now I decided to not include the sponsor's spouse, since documenting the income from the business would be quite complicated and still, the joint sponsor makes more than the requirement so I hope to make it past NVC. If they'll reject me first time for lack of income, then I'll add the spouse of joint sponsor or ask for another independent joint sponsor, whose income proving would be much easier since it would come from non self-employment sources. If I could use just the retirement income of the sponsor's spouse, then it would be great, without showing the numbers from the business(even though they are on plus digits). I'll be attaching all their tax return forms, including all Schedules that they had to fill, etc. so if I wouldn't have to do a lot of paperwork for the spouse, then I would give it a shot, I think.

You will probably make it past NVC, but don't expect to get past the interview without the spouse's signature on the contract.  Expect instead, for the Consular Officer to request/require that I-864a from the spouse.  It's what they almost always do.
