Theoretically, for your situation, if you get a B1/B2, doing a CR-1 is better as you can potentially visit and do your business during processing. The K-1 doesn't allow that. 

I have requested the embassy the postpone the fiance visa interview for 4 months for now specifically informing them I need to visit the us and come back to my country for my business. Awaiting their reply, I will then either take the tourist visa appointment or visit on ESTA.

This is the reply from the embassy:

Please note that once we receive the required documents, medical and appointment instructions will be sent.

In addition, we will update your visa application and will be open for one year from the last day of our communication.

Just an update on this, my B1/B2 visa was approved and my K1 remains open for 1 year
