I have a household of 3, me and 2 kids. I see nothing in the green card info that says anything other than that we should be considered a household of three. Right or not?

You are a household of 1.  Your I-864 only covers those who immigrated, not US Citizens.  Therefore, your children will not be counted in determining the poverty level if they are US Citizens.
