I may be late in party but heres my take. In my opinion it seems to me there is no LOVE involve between you two. Im guessing you are not really involved with her? You are her hope. She is depending on your promises. When you visited her, you were able to experienced her living condition. she has no future in that country. that is why she has posted her profile  in a dating site to  meet an unknown person and hoped for the best. its her ticket to get out of her third world country.

You should drop her now and find another one.

Because of the giant K1 backlog, our proof of in-person relationship that my fiance needs to bring to the consulate is more than two years old, but it wasn't when our application was approved.

What should we do? Is this going to be a problem?

It is a very inconvenient time for me to travel back for an in person meeting.

Shouldn't be a problem

Very common for person to travel to Philippines from USA and spend a week or two and then come back and file and get approved with only one meeting

Plus with the Philippines being shut down for tourism for 2 years, you sitution is understandable.
