CPA put wrong filing status for 2021 tax year

NVC would not care.  The consul officer might, but very unlikely.  As mentioned above, this is a tax issue, not so much an immigration issue.  I recommend you amend your tax filing only after your wife gets her spouse visa, enters the US, and gets her SSN.  You have 3 years to file an amendment anyway.

My brother did an amendment for the exact same reason.  He submitted the following to NVC: 2021 tax transcript, 2021 1040, 2021 W-2, 2021 1040-X, and a screenshot of the 1040-X case status obtained from IRS.gov's "Where's My Amended Return?"  Probably overkill but he didn't want an RFE.  Caveat: he has not been DQ'd yet.  Follow up with me in a month or so and I'll let you know if he had any issues.

Thank you. I also looked over the return again for any other mistakes he made that I missed before and noticed my address is one number off and he failed to put my middle name initial. That will be an issue when me and my father have the same name besides a middle initial, and he will probably help sponsor. 
 

something else that I’m worried about that I probably shouldn’t be, is my 2020 tax year, same year I got married. I never filed cause I didn’t make enough as a single person, but going back I realize I was supposed to file if I made over $5 (minimum requirement for Married file separately). Now I can try to get my W-2 for 2020 and file, but, correct me if I’m wrong, if I start going back 2 years to file taxes correctly for immigration, that will be more of a red flag to them since it could be contriving evidence.

You won't be filing taxes for immigration.  File taxes correctly to set your record straight with IRS.  Hopefully, you don't owe the IRS any money since your employer presumably withheld the tax money from your salary.  If so, I recommend filing your missing tax return when your wife gets her SSN.  Note that depending on your wife's foreign income, filing or amending your tax returns as MFJ starting with the tax year in which you married may be more financially beneficial for you.  Consult a CPA familiar with international taxpayer matters (not the CPA you have now).
