Left the country without I-551 stamp on my passport

Then, there is no valid proof of status as a legal resident.  The airlines would, rightfully, deny boarding.   The extension letter extends the expiration date printed on the Green Card. It does not extend an ADIT stamp.

If the letter expired, one should get the 551 stamp before leaving the country, right?

Yes, exactly.

And if leaving for a year or longer, one should get re-entry permit.

Either that or return to the US before the ADIT stamp expires (in the OP's case).

Make an appt at USCIS and request one, some will allow walk in.

Agreed. We did the same exact thing in mid-August from Greece. We flew United, but they asked for the letter and it wasn’t a problem. 
 

Good luck and hang in there. If you can, fly your husband to Matamoros and walk in to Brownsville. They’ll accept the letter no problem.

Wrong advice. OP filed a late 751 (about a year and a half late), so the extension letter is also expired. The extension letter only extends the validity of the green card from the original "resident since" date. OP got their conditional GC in 2018, so the extension letter and whatever stamps they have are long expired. Please read the whole thread before giving advice.

How is the husband going to walk in to an ASC if he's out of the country?

Yes. But the problem here is different. OPs husband already had an ADIT stamp, but because he filed the 751 late, his extension letter and the stamp are expired. He trusted an attorney, who gave awful advice. Probably the only way to get back in at this point is to file a re- entry permit or start over with an I-130

I read it was expired or about to expired.

 

We ran up to USCIS and got a I-551 stamp in my wife passport when her AOS expiration letter was set to expire, so we could travel to Mexico.  I remember them having a shelf life of 1 year.

My apologies. That was not stated when I read the part I quoted. If the letter is so very expired, they have already abandoned their greencard by being overseas for so long. Thanks.
