I am flying to the Philippines to visit and marry (via Utah) my fiance next month. What physical documentation do I need to leave with her to take to her interview later on down the road?

Birth Cert, Divorce decrees, ect.

I want to bring them with me so I don't have to mail them later.

Thanks in advance for any info.

The same as the documents you'll need to file the petition, as listed in the I-130 instructions.

I don’t recommend leaving the originals with your wife in the Philippines at this early stage, especially if you only have one set of the originals.
It will be quite a while before her interview and it is more efficient to prepare a  complete final interview packet and get it across to her at that time.
For her interview you will be adding any new relationship evidence , updated financials and she will have her own set of originals to add to that packet.

Time to do your homework and study the instructions.  There is NO substitute for that.
