My Wife interview is the end of this month in Haiti, I would like to know does she needs to take her Affidavit of support document with her to the interview or not. We have a joint sponsor but the joint sponsor doesn't want to provide copy of the tax return. Can I change joint sponsor at the last minute if so how do I do that?

My opinion: A joint sponsor MUST provide a copy of most recent tax documents.  Find another joint sponsor, upload the joint sponsor's I-864 & tax documents, and scan/email a copy to your wife for the interview.   Calling @pushbrk for expert advice.

In summary, it took 13 months for approval of the CR-1.  It took 44 months for approval of the I-751.  It took 4 months for approval of the N-400.   It took 172 days from N-400 application to Oath Ceremony.   It took 6 weeks for Passport, then 7 additional weeks for return of wife's Naturalization Certificate..

The most recent tax return is almost always requested.  Requested equals required.  The joint sponsor would not have been accepted by NVC without a tax return.  Perhaps they submitted 2020 but don't want to submit 2021.  If so, that would be a no go, and you would a different joint sponsor.  If they don't want you or your wife to see that tax return but it's OK for the Consular Officer to see, it, they can send a sealed copy directly to the Consulate by courier, referencing the name and case number for your wife.

So once I uploaded this new joint sponsor info to the portal do I have to wait for NVC to approve them again or not because my wife interview is on the 30th of this month and I know NVC take forever to approve documents.

The interview is already scheduled.  Attend as directed.

They may not ask for it but what I think you should do is have another joint sponsor fill out the 1864 and have your wife take it with her. That way if they do ask then just tell the truth and give it: but i can ask for you because I know someone working there

Then send a complete copy of the return including everything and w2 and 1099 forms.  Everything you sent in the mail.  That ..... OR.....Tax Return Transcripts.
