I received an RFE for not uploading my 2021 1099's/W-2's (I assumed that 1040 was sufficient). My I-864s were accepted except for one error on my I-864A.

 

Should I update my I-864s' income and signature dates? Or just fix the issues they outlined and hope they accept my 2020 incomes being the last ones listed on the 864? I am worried because I don't want to complicate things that say they have been "accepted", but at the same time, 2021 should be the most current income and I don't want to get another RFE.

Unless you are self employed, your current income does not come from a tax return.  Tax returns are about the past.  A complete copy of a tax return includes W2s and 1099s.  If you have a W2 you are not self employed.  Sure, update everything including your current income as calculated from your pay stub.  Include the pay stub as evidence of current income.  Current income is gross pay for a full pay period times the number of pay periods in a full year.  1k a week, is 52k etc.

Facts are cheap...knowing how to use them is precious...

I live abroad and so therefore do not have any US income, and am using my parents' retirement income (all of their 1099s) to satisfy the financial requirements. Would this and proof of my capital gains I attained via interest (the only income listed as AGI in 2021) make NVC happy? I am worried as 1099 is not considered a "tax return" or "tax transcript" that is listed on the I-864 but at the moment we do not have a tax return for 2021, and I cannot access tax transcripts due to not having a US phone number to use the IRS website.

First, you MUST separate in your mind ANYTHING to do with tax returns from "current income".  Tax returns and information from them are required but they have NOTHING to do with current income.  For your retired parents, their Social Security and other pensions give "declaration letters" that are used to document and calculate current income.  For example a Social Security Recipient and or other Veterans or Government retirement program receives 5.9% more in 2022 than in 2021.  If your parents are not required to file a tax return for 2021, then there will not be one.  Use the Declaration letters to document current income.
