This is how I plan to have my evidence, in my I-129F form, I provide our statement as intent to marry, and my boarding pass and my passport stamp and my receipt for hotel. And also pictures of me and my fiance together. And then my fiancé will print out a couple of pages of our online communication and a receipt of his engagement ring and a statement from his aunt saying she saw us in person can witness us together and that we are in love. All that he will take to the interview.

Not necessary for a case to be processed in Manila.  I have not heard of any Manila K1 case here on VJ or elsewhere that was asked by the CO to present 3rd-party statement/affidavit of bona fide relationship.

His aunt was there with us and is in some of the pictures. We decided to have a statement from her too just to help.

If you go by the USCIS form instructions, proof of ongoing bona fide relationship is not required for the I-129F.  What is required is proof of in-person meeting within 2 years of filing.  But as I said before, for certain consulates, submitting relationship evidence would be strongly recommended, even if not required at the USCIS stage.  For other consulates, it would be overkill.

The consulate my fiancé is filling is at Philippines, Manila.

What "declaration of how we met letter"?  You mean you're not able to fit the description of how you met in the space provided in the I-129F form, so you need a separate document for it?  In any case, the I-129F is your (the USC's) petition, so you are supposed to fill it out.  Of course, your beneficiary may help, but not required to sign anything aside from the statement of intent to marry.
