I'm about to submit my forms. My grandmother recently just passed away, and we live in her house and she has a reverse mortgage. There is a chance we might have to move. Do I need to hold off submitting the forms, cause if I move will that effect the visa and making the current address I put in the I-129F form invalid?

It won’t affect the petition but you will need to update the address with USCIS so you receive correspondence from them (NOAs, etc). The wait for K1 is only increasing so I’d send that asap. After you change the address, follow up again in a week or two to see if it was indeed changed in their system.

How do I follow up with them? I found a form I fill out when I need to change my address when I move, where I use the receipt number I get after I send in my petition. I am changing my mailing address to an address of a family member I am close with.

I sent in my form already. But I realized I never made a new copy with my signature on my I-129f form. I know my fiance has to bring it to his interview, will it be a problem if I send him a copy with my signature. I'm worried that since I didn't make a copy, my signatures won't match up with my fiance's copy and the one I send in.

This is not a problem. There is no requirement that your fiance brings a copy of the I-129F to the interview. Some embassies will actually send you a PDF copy of the approved petition - Warsaw did it for us. The email you received is standard and is just telling you to await your NOA1 in the mail. The next correspondence you will receive from USCIS is an approval or request for evidence in around 15 months.
