Can confirm on the second one, a single letter of intent signed by both petitioner and beneficiary is fine. I've heard of people getting RFEs for this as well, but I think they're leaving something out of the story. For example, if someone writes a letter entirely from their perspective (i.e., "I will marry my fiancee") and then randomly includes the fiancee's signature, USCIS may have an issue with that. But a letter which says "we agree to marry" shouldn't encounter any difficulty.

That is only logical that anyone looking at the letter will ask.  It would seem that one side doesn't know what he/she was signing if the pronounce is "I" and two people signed it.

 

Each of the couple can write a separate latter.   It could be written in another language with a certified translation.
