If you are set on pursuing K1, do not risk it by doing something that could make the consul officer suspect that you might be married.  As others already mentioned, there is such a thing in immigration as "too married for K1, not married enough for CR1".  As for insurance, just get your fiance travel insurance.

He doesn't have insurance from his job or currently I am assuming. Would be a lot easier to get a travel insurance policy if he is just coming for a few months in my opinion.

Just yesterday I was watching an immigration show were the couple had an "engagement party" and they sent the pictures of said party as evidence of their I-129... Guess what happened, they had to start all over with a CR1

Short answer is yes it can mess it up. Members have been denied for much less.

In summary, it took 13 months for approval of the CR-1.  It took 44 months for approval of the I-751.  It took 4 months for approval of the N-400.   It took 172 days from N-400 application to Oath Ceremony.   It took 6 weeks for Passport, then 7 additional weeks for return of wife's Naturalization Certificate..

I think that when it comes to K1, the problem tends to be that many come to this site AFTER the thing was filed. Because you go to USCIS, you check the official sources, and yeah, the K1 looks doable. Looks like it will be faster. But what the official sources don't tell you is how haphazard the whole thing is: NO, the deadlines you're seeing here might apply to your case but probably will not, for a number of reasons. Getting your 129f is just the very first step, then comes the NVC and all of their delays, and then the Consulate with their own backlogs. And when you think you're done, you find out about AOS. Again, forget the deadlines you see on official sources. Forget about getting an EAD within 3 months (those were the days!) and about travelling abroad if there's an emergency, or driving depending on where you live. You just fork out more money and wait, again. And you wait for longer than they tell you. 

 

So, yeah. I agree with the others that going for the spousal visa is a better decision, but I also understand why OP would want to stick with the K1. Once you get started on a process, most people don't want to (and some actually cannot) put even more money (and time) into it to start a new process with a spousal visa instead.

Oh well, then. I wish we had found out what a bad deal the K1 was within 2 days of sending the papers... 😂 

 

In any case, as long as OP is aware of the hurdles, they're free to choose what suits them best. Informed decision, as someone said.

Coming from someone that entered US as a K1 visa holder and submitted my adjustment of status along with my work permit in October --- we regret it because Texas takes FOREVER. So far I've only completed my biometrics appointment, and getting close to the 7 month wait time. If we would've known it was going to be this long, we would've gone with the CR1.
