I can’t seem to find info on the AP.  Can you send me a link to explain how that works? Once she gets AP and leaves, how long can she leave for and must she then wait outside the US until green card is approved? Thanks!

Have a read through the guides.

And read through instructions for AP here.

AP is the document that allows an adjustment of status applicant to leave the US without abandoning their AOS

If your partner decides to adjust but  1.) doesn't apply for AP or 2.) leaves before they receive AP 

They have to wait outside the US and consular process. 

General FAQ on adjusting status you might find helpful.
