I used to have a ssn card back when I was in college (cannot find the card though, lost it)

or would I just apply for a 'new' one? since it will be under a new "category" (for aos)

SSN is assigned for life, so you should not apply for a new number.  The physical card is rarely required, but you should get a replacement anyway.  You may apply for one as soon as you get your EAD, though I recommend waiting until after you get your GC.  That way, your SSN card will not have the annotation about being valid only with DHS authorization.
