If your joint sponsor did not meet the income requirement on last years tax return but their current income as of this year does then will that be sufficient or no?

Current income is the key. So you should be good.

Immigration journey is not: fast, for the faint at heart, easy, cheap, for the impatient nor right away. If more than 50% of this applies to you, best get off the bus.

As @Timona has said, current income is what matters. What stage of the process are you in? Remember you need to support your claims with evidence, so paystubs and a letter from your employer are a must.

FROM F1 TO AOS

October 17, 2019 AOS receipt date 

December 09, 2019: Biometric appointment

January 15, 2020 RFE received

January 30, 2020  RFE response sent

Feb 7: EAD approved and interview scheduled

March 18, 2020 Interview cancelled

April 14th 2020: RFE received

April 29, 2020 Approved without interview

May 1, 2020 Card in hand

 

REMOVAL OF CONDITIONS

February 1, 2022 package sent

March 28, 2022 Fingerprints reused

July 18, 2023 approval

July 20, 2023 Card in hand

 

N400 

January 30,2023: Online filing

February 4th, 2023: Biometric appointment

June 15th, 2023: Case actively being reviewed

July 11th, 2023: Interview scheduled.

August 30th, 2023: Interview!

August 31st, 2023: Oath ceremony scheduled.

Sept 19th, 2023: Officially a US citizen!

I should be getting my petition approved within the next month or so. I just started my second job full time and I get paid monthly so my first full time paycheck from them will be May 20. If I get approved by then I can provide that and a letter from my employer stating how much I will be making yearly. And then when my husband has his interview I will take more recent paystubs as well

Timeline

If you are still waiting for the petition approval you should have plenty of time to collect more paystubs, to support your current income for the eventual interview, which will be scheduled some months after petition is approved.  You should upload these with the I-864 at the NVC stage in the coming months.  The interview date will depend on the backlog in the DR.  Good luck!

Thanks. I know my current annual income will be like 8,000 more than what I need so I do not think I will need a joint sponsor. I will just provide an employer letter and pay stubs and take the most recent ones with me as well

Note that the pay stub is more important than the employer letter.  It's "or" not "and" in this case.  Ok to provide both but not required.
