If they had denied it for late filing, you would not be looking at the Form I-751 Receipt Notice, instead you would likely be looking at a denial or rejection letter and your entire I-751 package sent back to you.

Your receipt letter means they received your I751 petition. And they extend you for 18 months. During the 18months extension you are good to travel and work. Now uscis has your petition and you just have to wait patienly until they approve you for ten years green card. Receipt letter only extend you for 18 months it doesn't mean that you are approved yet.  You can check you case status online via myaccount.uscis.dhs.gov 

Your worrying too much. It will be fine.

Seems like 3-4 weeks is standard for EAC biometrics letters!

Hi guys, I sent my papers to Az on May 3rd. NEVER received any notification nor an extension letter and the check was cashed almost a month later. I was waiting patiently, but at this point I’m kinda freaked out, my GC expired already and I don’t really know what to do, any advice?

I would call USCIS customer support. If they cashed your check, most likely you are in the system already and they can look you up without a receipt number. It won't hurt to try.
