hello I live in Haiti, I am a k1 visa applicant, my interview is for the end of this month, The Embassy recommends an Affidavit, the problem is that my fiancée does not work she receives the  help from the government (SSI) his mother will sponsor us.  she earns 31,000 a year.  will his mother be enough?  The other question the form asks his mother for a letter from his employer, we won't have it by the interview, could the last three paystubs replace the letter?  I need your help please

It’s always up to the interviewing officer to make the final decision. We’re not in a position here to make predictions. Yes 31k is above the threshold but whether it’s enough or not, that’s up to the IO. Same is regarding an employment letter, they may or may not ask for it.

For a household of 3, the minimum income for support is 28,787.50 = 1.25 X 23,030.

https://aspe.hhs.gov/topics/poverty-economic-mobility/poverty-guidelines

Both your petitioner and the joint support (the mother) may each need to complete an I-134 and send to you for your interview.

https://www.uscis.gov/i-134

So you should have two I-134s with each having its own supporting documents to take with you to the interview.

For the Checklist of Required Initial Evidence, I would include as much and more of what is required to avoid the 221g.

Good luck!
