Tinolang Manok (Chicken Ginger Stew) Recipe

1 kilo whole chicken, cut into pieces.

1 small young papaya or sayote, cut into small pieces.

2 tablespoons ginger, crushed and slliced into strips

1/2 cup dahon ng sili (chili leaves)

1 liter of water

5 garlic cloves, minced

1 red onion, diced

4 tablespoons oil

2 tablespoons patis (fish sauce)

1. In a stock pot, heat oil and sauté garlic, onion and ginger.

2. Add water and the chicken.

3. Bring to a boil and simmer for about 20 minutes or until chicken is almost done.

4. Season with patis

5. Add papaya and continue to simmer for an additional 5 minutes or until papaya softens but not overcooked.

6. Add sili leaves then turn off the heat.

7. Serve steaming hot with plain rice.

Chicken Afritada Recipe

1 kilo chicken, cut into pieces

5 pieces potatoes, peeled and halved

1 red onion, diced

1 head garlic, minced

1 green bell pepper, sliced into strips

1 red bell pepper, sliced into strips

2 cups pork or chicken stock (broth)

1 cup tomato sauce

2 tablespoons of patis (fish sauce)

3 tablespoons of cooking oil

1. In a cooking pot or wok, heat oil.

2. Sauté garlic and onions.

3. Add chicken and slightly brown.

4. Pour the tomato sauce and stock. Bring to a boil and allow to simmer for 20 minutes or until the chicken is almost cooked.

5. Add potatoes and continue to cook for 10 minutes or until the potatoes are cooked.

6. Add the green and red bell peppers, simmer for an additional minute or two.

7. Salt and pepper to taste

8. Serve hot with rice.

no name for it but its awesome:

start w/ boneless chicken breast cut to 1- 1 1/2 inch squares.(marinated if you like)

slice them in the middle.

insert 2-5 (depending on your personal taste) pickled jalapeno slices.

wrap w/ 1/2 slice med.- thick bacon.

wood toothpick through center. to hold it together.

get your tongs & a spray bottle w/ water ready!

grill'em up(gas or charcoal doesn't matter, its gonna flame up)

when ends of toothpick are almost burnt off & bacon is crispy they're done.

(warn the kids & drunk neighbor about the tooth picks!)

now thats some good stuff! :yes:

HAHAHA OMG! This is the best thing I have read all day haha. When I was visiting my fiance there was always that rooster outside the window I always wanted to cook. HAHAHA. When we where visiting Siquijor, our resort was right next to a chicken farm. Oh joy was that choir.

Hmmm Just so I can contribute here.

Chicken and Eggplant Parmesan

1 eggplant, about 1 lb., cut into 1/4-in. rounds

4 tbsp. olive oil

1 tsp. salt

fresh ground black pepper

1 lb. boneless skinless chicken breasts, (about 3)

2 cups canned crushed tomatoes in thick puree

1/2 lb. mozzarella cheese, cut into thin slices

1/3 cup grated parmesan cheese

1/4 cup fresh basil leaves, lightly packed*

Heat the broiler.

Arrange the eggplant in a single layer on a large baking sheet. Coat both sides of the eggplant with 2 1/2 tbsp. of the oil and sprinkle with 1/2 tsp. salt and 1/4 tsp. pepper. Broil, turning once, until browned, about 5 minutes per side. Turn off the broiler and heat the oven to 425º F. In a large nonstick frying pan, heat 1 tbsp. of the oil over moderately high heat. Season the chicken with 1/4 tsp. of the salt and 1/8 tsp. pepper and add to the pan. Partially cook the chicken for 2 minutes per side and remove from the pan. When cool enough to handle, cut the chicken crosswise into 1/4-in. slices.

Oil an 8-in. square baking dish. Put one third of the eggplant in a single layer in the dish. Top with half of the chicken, half of the tomatoes, half of the mozzarella, one third of the Parmesan, half of the basil, and the remaining 1/4 tsp. salt. Repeat with another third of the eggplant, the remaining chicken, tomatoes, and mozzarella, another third of the Parmesan, and the remaining basil. Top with the remaining eggplant and sprinkle with the remaining cheese. Drizzle with the remaining 1/2 tbsp. oil.

Bake for 20 minutes and let sit for 5 minutes before cutting.

Snatched this off the internerd. The only difference really than the way my good friend Tim the chef makes it, after baking it for a short time he then puts it in the fridge over night then bakes it again the next day. He says this lets the eggplant caramelize. But this is certainly not necessary.

Run over a few times to tenderize more.

Defeather. If balut size no need!

Marrinate in shoyu, brown sugar, garlic and ginger.

Throw on the barbee and "grind" [ means eat in Hawaiian].

Boil one or two yardbirds (England slang for chicken) for 45 minutes.

Season with red and black pepper, or whatever your favorite seasonings are.

Put on grill for 10 minutes, after turning put on BBG sauce.

Simple and delicious. The boiling keeps the chicken from drying out on the grill.
