If you are still waiting for the NOA2, then I suggest you to ask about the I-134 affidavit of support. That has different requirements, and is also country dependent.  Some countries allow for co sponsors, some do not.  Some countries allow for self sponsor of the beneficiary (assets), some do not.

How do we know if the beneficiary's country accepts that the beneficiary has its own income, assets?

There is no place on an I134 to use a beneficiary’s assets but you asked about the I864 (AOS) not I134 (K1) support affidavit.

The bar is lower for I134.  Your current, ingoing income has to meet 100% not 125% of the poverty guideines.

 

You two play around with this before a K1 interview and it is going to look like a foreign beneficiary is paying you to sponsor a visa.  That’s gonna flag at any consulate.  If that’s what’s happening here don’t do it.

Due to an accident and convalescence I was unable to work full time last year for a few months but this year I am working full time like the previous years, I just wanted to find out if for the affidafit and support both spouses could pool their income together. But if that's not possible, my income is enough. And we don't play before the interview, I just asked a question.

Spouses can pool their resources and that was clearly explained above.
 

You are not spouses and you are not accused of doing anything wrong.  The above was a caution.  What you need to be doing is approach this from the standpoint of the step you are on.  You just skipped past K1 to spouse again and it is best, if you wish accurate advice, not to do that. 
 

“The affidavit” is different in the K1 step than it is in the spouse visa or AOS after marriage step.  They are two separate affidavits and have different rules and guidelines.

Please read the guides and educate yourself a bit before asking questions.   It is a complex process, and it isn’t black or white.   Google “totality of circumstances.”

 

It sounds like you will likely need a joint sponsor, but because you have not done a timeline or researched the process, your questions come across as haphazard.

You have 1-2 years before he will be adjusting status.   It is based on current income.   That will be your W2s at that time, not whether you made enough last year or whatever.

Since you never bothered to share what country your fiance is from you actually didn’t get anything.  
 

In some countries if YOU can’t demonstrate that you can sponsor your fiance what he/she has means nothing.
 

Timelines help other.  Build and populate yours if you wish us to help you.
