Ok I know I’m putting the cart before the horse, however I would like to take all the documents that my fiancée will need for her interview with me next Saturday when I visit her. When filling out the I-134 is it necessary to include life insurance information? What if I don’t have any? Soon my house will be sold and I will be renting until I relocate to Texas so where they want the mortgage information can I leave that blank? Do I need to include my tax information since I’m not self employed and have a letter from my employer stating my income?

Thanks in advance

If your income is sufficient you can just skip everything below that. Leave it blank.

The Consulates prefer the I-134 and supporting financial documents be as fresh as possible at interview time. I would wait and send the I-134 until after the visa application is in the fiancee's hands. If you want to take the tax returns with you, that's a good idea.

It's not a requirement but the best practice is to provide three years tax transcripts and some recent pay stubs to back up the statement of income. Otherwise, anybody could just write-in any income amount that suits them. You're trying to convince a Consular officer to grant a visa, not simply to get by with as little effort as possible.

You will need a letter (on company letterhead) from your boss stating your income, length of employment, full/part time, etc. That will show your income. Income tax transcripts can be a backup.

I suggest you use a courier service like DHL. Don't trust international postal serviced with important documents. DHL tends to be the preferred carrier for international shipment. US DOS uses them as do most other governments.
