The only immigration-related consequence if your father marries before his visa interview is that he must disclose his marriage by updating his family information on the DS-260 form at or prior to his interview.  At the interview, he will be asked to swear that the statements made in his application are correct.  But, as mentioned above, he still can't have a derivative beneficiary, even with his new wife listed in the DS-260.
