Timeline

Technically, it doesn't matter, but you will generally get a clearer image using a color copy or scan, if there is any color in the original.  This is particularly true for photographs.  

Facts are cheap...knowing how to use them is precious...

How would you recommend to put them .would you scan  the  passport page with each trip or just put all passport stamps in separate pages and caption them by trip?

I would scan as many passport stamps as possible onto the same page.  Use as few pages as possible to accomplish your task.  You do NOT....NEED to use Word.  If the passport stamps are fully legible, you don't need captions either. If they are NOT fully legible, the captions can be written by hand.

So I probably have to go to a staples store to get them scan by with their machine. Because if I can scan it only saves it then I got to put Them somewhere

Using a real scanner is generally the best choice.
