I'm a US citizen. My spouse is in the US with a CR1 visa. We want to bring (sponsor) her son to live with us in the US. Where can I find a list of all supporting documents to file the I-130. I want to ensure I have everything (supporting documents) so that I do not get RFEs. Many thanks.

How old is the son?

Immigration journey is not: fast, for the faint at heart, easy, cheap, for the impatient nor right away. If more than 50% of this applies to you, best get off the bus.

Was the son listed on the original CR 1 petition?

how old is he?

if a minor does the mother have father's permission or a court order saying he can move from the country?

Check the I-130 instructions here -- https://www.uscis.gov/sites/default/files/document/forms/i-130instr.pdf

Page 8 lists the relationship evidence required for petitioning a stepchild.
