But it sure is good. I'm at work right now getting ready to take a lunchbreak and all I have is a turkey sandwich and a banana. I keep kicking myself for not bringing the leftovers of the dish I made last night.

My dad decided to plant alot of squash plants and everyday he's bringing in buckets and buckets of the stuff. My mom keeps giving it away, but it just keeps coming. He asked me if I would do something with it, so I asked around and was given a recipe for "squash casserole". It didn't sound very appetizing, but when I tasted it, I thought it was DELICIOUS. It tasted kind of like potato casserole, but with squash...imagine that.

After you turn your oven to 350 degress F, you layer the bottom of a glass pan (12x9 I think?) and crumble up 1 and a half packages of Ritz crackers and spread them out on the bottom. Then you smash up 4 squash(es?) that you boiled and spread them out over the crackers. Then in another bowl you mix 1 c. sour cream, 1 c. shredded cheese, and one chopped onion together, and then spread it out over the squash. Then take the other 1/2 package of Ritz crackers and crumble them up over the sour cream mixture and put it in the oven for 30 minutes. I think I left mine in a little longer because it didn't look done to me, but I could be wrong, I never made it before.

I would have copied and pasted a link, but I got this recipe from someone at work:P She wrote it really weird so I think I might have done some things wrong, but hey, I liked it. You might have been supposed to mix the squash in with the sour cream...but oh well.

So if any of you VJ'ers have an excess amount of squash (is that normal?) here is something you might like to try.

With squash, it is proverbial that there are two extremes of yield, nothing in between:

• ZERO (basically, your planting is a bust due to bugs, ...)
  
• large excess

I love squash and that recipe sounds delicious. I'll try it. Is it too big? I'll make just for me, my husband eat hardly no vegetables at all, and certainly not squash (like a kid that says they don't like something without even trying just because it is a vegetable ). Thanks for sharing
