What about the boarding passes and passport stamps? Do you just scan them on a pdf file  with a scanner app on your phone ?

I havent started the paper work yet but my understanding is to be as thorough as possible in the assumption that the person that views it is going through job applications and want to find or see important information quickly and clearly. So i would think you should find a way to describe the important details of each picture somewhere as you present them so they can't even find excuses to ask "what am i looking at here?"

Or put it this way, assume the person that will view your case is going to be looking for reasons to send it back to you rather than move it foward. Don't give them any excuses.

The procedure you used is fine but email confirmation is not evidence of travel.  Boarding passes and passport stamps are evidence of travel.  Email confirmations are evidence you paid for a ticket, not that you ever used it to travel.
