We have recently filed for our AoS. We also did receive SSN ( with maiden name ) prior to filing AoS and used the same when filing for 485. For one of the questions where it asks if we need a new SSN issued  , we answered "No" as we already had an SSN.

Had we answered "yes" to this question and provided our SSN , does it mean we would be getting a new SSN card ( with same #) and with the married name that we are using when AoS and thus avoid a trip to the SSN office ?

Since we answered No , would that mean after we get our EAD/AP and GC , we would then have to go to the SSN office and get a change of name from maiden to married name ?

Secondly for a DL , I am reading we need to show lawful presence , since our i94 already expired and we are currently only having a NOA1 for pending 131/765/485 - is that good enough to show lawful presence to get a new TX DL.

Re: DL - you will need to check the Texas rules as each state is different. My state accepted an expired I-94 and NOA1, but other states may vary. If you contact the DMV, they ought to be able to advise you of the documentation requirements.

Yup.

After receiving GC, you'll have to go to SSA in person anyways to apply for an unrestricted card.

As above, DL laws vary by state but one easy way to find out the process in yours is to google "(your state) DMV non US citizen Driver's License" and it should lead you to a checklist or a document calculator that will help you determine what your need..
