Or location, like: "We got married at St.Paul's Cathedral on a ceremony officiated by pastor James Jones".

The pastor name is not necessary but you can mention it. The two witnesses, no need.

The OP hired an attorney who presumably knows more of the circumstances than we do.  If the professional you hire, advises you to do something, do it or fire them.  I can think of lots of reasons for this advice, but why not ask the attorney what to put in the letter?  I see no reason NOT to write the letter or why NOT to explain the reason for marrying in another city.  Sounds pretty straight forward to  me.  Evolution of relationship letters are also common when there are sufficient concerns to warrant them.  The attorney knows more about the reasons than the OP is telling us.  Follow their advice.
