I want my fiance to apply for a B-2 before we file the K-1 just in case it takes too long. Anything we should avoid ?

That's an insane assumption, however you are free to do as you please. I just hope if you are ever giving advice it's with less guesses that are are almost guranteed to be wrong.

This, on a K1, is worrying.  If your wife has never been to the US and it is all new, she will be stuck like a prisoner, in the US.  She can't travel home to visit her family and friends.  She can't drive.  She really is stuck.  

 

Studying or not, entering the US on a CR1 is superior for the beneficiary.  Life IS different in the US, so being trapped with limited options is really no way to start a marriage.  It puts unnecessary strain on both of you.  Please, reconsider and keep her feelings in mind.  I'm assuming you've visited her in Columbia...consider how out of place you probably felt.  But you had a return ticket home. She won't have that.
