My fiance arrived in December and we got married on Dec 31, We filed our AOS on Jan 5, her date written in her passport card when she arrived by Immigration expires on March 2, so my question is, What do we do in the meantime while we are waiting on the AOS to be completed to show Elvia is here legally?

When she receives her USCIS letter acknowledging receipt of the AOS application, I797, this becomes evidence of her legal presence while the application is being processed. When she receives her EAD and AP cards these also function as documentation  until she is approved and has her GC in hand

How long will it take to get the 797?

It varies 2-4 weeks ish. Best way to follow the process is to have an online myuscis account, or use 

https://egov.uscis.gov/casestatus/landing.do

 

to check the case status.
 

A myuscis account will allow you to print any documents sent to you by the USCIS before they appear in snail mail

Her I-94 is still valid until March 2nd. That serves as evidence of her legal presence meanwhile.
