Who or what kind of interviews occur at NVC

If you are good at Photoshop, it is often impossible to differentiate with the naked eye.

For those who comes on CR-1 visa, interview was held at local embassy in home country.

for your answer about being good at photoshop, yeah they might or might not be. here it is not the question for this thread.

Lol all evidence can be faked.  Photos, bank statements, etc.

Maybe passport stamps are beyond the pale.

If standard is evidence  that can’t be faked, then no one would ever get approved.

Embassy is NOT and should not be ever confused with NVC.

This thread is about the i751, this has a very different purpose than the i130 petition and subsequent IR interview.  I130 experience is not relevant and is therefore not the question for this thread.

At some stages of the immigration process, especially the early ones, when the couple might not have lived together yet, photos might be somewhat helpful because there might be an indicator of time spent together.
However, at the time of ROC, since the couple has been together for at least two years, more “substantial” evidence is better, such as joint bank accounts, joint health/ car insurance, joint deeds, leases, retirement accounts, etc.
Then again, you are also at the mercy of a specific officer. Some might be more strict, some might be more lenient.

I think -going back to OP’s question- that one has to really explain their case to the officer and connect the dots for them. If the joint account is merely used, explain why. If there is no joint lease, explain why, etc etc.
