Does anyone know why California Service Center is the only service center that processes the K1? I was looking through the processing times on USCIS.gov and, according to the website, California is the only center that processes the K1, whereas Texas, Vermont, Nebraska, etc only process the K3? And those service centers seem to be going a lot quicker than California.

All K-1s have been adjudicated at the California Service Center for as long as I've been on VJ, which is six years.  A very small percentage of them (those with criminal backgrounds) are sent to Vermont.

Apples and oranges.

There were just a couple of K-3s approved last year, worldwide.   I-129F petitions have been adjudicated exclusively at the CSC for years.
