Hello, the ideal is to have a copy of everything that you present in case they ask you, it is always better to have it than not to have it. Important fact: if your boyfriend/girlfriend was married, then you must bring their certified copy of the divorce certificate, I tell you this based on my experience. Birth certificate, police, criminal and judicial records are original. You must also bring evidence of your relationship (WhatsApp conversations, e-mail, texts, photos, if you had taken trips together you must bring the reservations made at the hotel or where they would have stayed, everything you may have that adds to your case to prove that you maintain a real relationship to date with the person who is asking you.

Is it required to bring a copy of everything we filed with the I-129F to the visa interview?

No, it is not required to bring a copy of the petition documents.  But the visa applicant may want to do so for their own benefit, to review important dates or their petitioner's family information, for example.  Also, it would be a good idea to bring fresh statements of intent to marry, if those submitted with the petition were from more than a year ago.
