While doing the K-3 (spouse visa) process can my wife  (currently a Colombian Citizen) work abroad (in Spain) without disrupting the process?

Your spouse getting an K-3 would be extremely rare since a handful are approved each year.

While she is going through the immigration process, she can do whatever she wants.

If she enters on a K-3, she is not authorized to work in the US.  It would take 6-8 months to get approval to work from inside the US.  This is a major con to the K-3.

The CR-1 allows her to work as soon as she enters the US.

CR-1 seems something to look into...

you will be married and you will be doing the CR1 for a spouse visa

k1 will no longer be an option for u once u r married

if she is a permanent resident in Spain working legally there ,  she can interview there

(just need a criminal report from her home country for the NVC stage and original for interview)

if going back to her home country for the interview,  make sure she has a criminal report from Spain before she leaves

Saying all that as those are the needed documents that later cause issues when not ready for the NVC (2nd stage of this process)

No, they are not.  Moot point as the K3 has been virtually extinct for more than a decade.

Employment and Travel Authorization

If you are admitted to the United States with a K-3 or K-4 visa, you are automatically authorized to work based on your status. To obtain evidence of employment authorization, you may file Form I-765, Application for Employment Authorization at any time after being admitted to the U.S. Alternatively, you may file an application for a Green Card and then apply for employment authorization based on that pending application even if your K-3 or K-4 nonimmigrant status expires.

Still a moot point, but one cannot work without evidence of employment authorization.  The K3 visa holder goes through the I-765 process just like any other person entering on a "non-immigrant visa".  All the above is saying, is that approval is "automatic", but not that it will take any less time.
