My wife is a US citizen but hasn't lived much in US. Anyone who has similar case. What did they show for domicile?

They don't show anything like that when filing the initial petition, but if they have a US Mailing address they can use, like a family member of friend, that will make things more convenient.  At the NVC stage, several months after filing the petition is where domicile issues are dealt with.  Which country you're coming from and other totality of circumstances will dictate what you need to do about both the domicile and financial sponsorship issues.

US address she calls home like address of parents

state driving license

US bank account(s)

US tax returns as required for USC working outside the US

Nice idea and list but quite possible the USC has little if anything on that list.

What country is you  and your spouse  living in ? Each consulate / country has their own approach to assessing “ domicile” and asking your question in the appropriate regional sub forum will likely bring you more specific information

The answer to this question depends on the country where the visa interview will eventually be done.  The US consulate in Montreal, Canada, for example, has very strict US domicile requirements for the US citizen petitioner.  Often the US citizen spouse has to return to the US from Canada before the spouse's visa interview to find a place to live, establish a US domicile, and start working to show US-based income.  Other embassies/consulates are less strict, and documents to show "intent to re-establish US domicile" is sufficient.  So which country will you interview in?  Maybe complete your timeline to get the best advice or go to the country portal here on VJ and search for threads about domicile.  There are also financial sponsorship requirements, with US-based income, for the petitioner (primary sponsor) or joint sponsor.  Good luck!

i realize but i tried to stick to the question and the person  did not ask what to do to reestablish residency

i got admonished by one member when i told her what to do instead of sticking to the question

so, the question was what did they do to show domcile? and those were the answers most give

We will be interviewed in Dubai. She has US bank account, has filed taxes, learner's permit right now.. We are planning for her to go back to US at nvc stage so she could get drivers license, and a job probably. Would that be sufficient? We ll be living at my brother in law's house who will also be our sponsor(he owns the house together with other brother in law) could we get some thing from them. My wife has been using their address for her med insurance and bank account.

Sounds perfectly sufficient.
