When to request Expedited interview?

My I-130 petition has been approved for EB2 National Interest Waiver, and currently we just started consular processing. I work as a healthcare professional and plan to request for an expedited interview.

 

It will take at least 2 months to gather all the necessary documents for NVC

When would you recommend submitting an interview expedite request? I know it takes up to 2 months before receiving a reply and approval from NVC, so I was wondering if I should submit the request now, or wait until all documents are submitted to NVC and processed and then request for an expedited interview? I am just mindful of what appears to be a 2 month timeframe to get a reply. 

Any thoughts would be much appreciated.

I think you should request an expedite now, that way you are basically receiving the approval/denial when you have all your documents ready to submit. 
sometimes it takes a while to get back a response for an expedite request(even up to 45 days)

I don't get it.  

They say to request expedited request if your flight is within 30 days, but how would that work if it takes 45 days to hear back?  

  

I also don't understand the financial hardship part.  

I'm the sole provider for my wife and she can't afford childcare without my help. I'm working for a US employer from Japan but my company has made it clear that they want me back as soon as possible. I have no idea what the expedite for financial hardship means, because wouldn't hesitancy about losing my job be an indication of financial trouble?

Not sure where you got the idea that you may request for expedite based on flight date.  Expect to be denied if you request for expedite based on an upcoming flight.  The Department of State explicitly warns against making travel arrangements until after receiving the visa -- https://travel.state.gov/content/travel/en/us-visas/immigrate/the-immigrant-visa-process/step-10-prepare-for-the-interview/step-12-after-the-interview.html

 

"Important Notice

Do not sell your house, car or property, resign from your job, or make non-refundable flight or other travel arrangements, until you have received your immigrant visa."

Thank you. This seems like a good idea. 

I have mentioned this plan to my lawyer but have not received a response yet.

This was probably the case before COVID, but now it’s taking about a month and a half for a response and then another 2-4 weeks for an interview if you get an approval. 
I know that reasoning is so annoying cause if you show that you lack money they would use that against you in the affidavit of support but I think if you word it different it would make more sense. 
like perhaps to say that My wife has to care for our child and because she is trying to care for the baby she can not work which means I have to work and assume my role to help financialhl. Not these exact words but something similar. These expedites are approved randomly, I’ve seen some people get accepted with little to no evidence in financial hardship and then some that have all the evidence in the word and get denied. You will never know till you try.
