Fiance is in Hubei and currently working and wants to minimize taking off work.

Will it be possible to complete the medical in Wuhan or will she have to travel to Guangzhou and can she complete the medical exam on the weekend or is it only on weekdays?

Contact the clinic and ask for their hours for the immigration medical.

Thanks!  Do you know if she can do this early?

We're pretty close to receiving NOA2, can she do this over the winter holiday to avoid impacting her work schedule?

The best policy is to get the medical just before the interview as the visa expiration will be no later than 6 months after the medical exam.  The visa expiration is tied directly to the medical exam date.
