I-864 what is my most recent tax year

I’m preparing to file NVC AOS, what will be considered my most recent tax year, will it be 2021 or 2020?

If you’ve filed for 2021, then 2021.  Otherwise 2020.

so far 2020 is the most recent.

The window to file 2021 taxes is not open yet.

The IRS said Monday it would start accepting 2021 federal tax returns on Monday, January 24.

The tax filing deadline this year is Monday, April 18. That's the day by which you must have filed your 2021 individual return

I would expect an RFE.

I don't think an RFE will be warranted.

They may ask to bring tax returns to interview instead if after April 18 2022
