For the SSN card, read this. I got mine after we were married so that it would be in my new last name and all I needed was my passport and I-94 and my marriage certificate to prove the change in last name.

Here is the guide for AOS from K-1. Also, the instructions for the I-485 will tell you exactly what you need to submit.

What do you mean your "fiancee turned it all in"? Are you saying she submitted originals and it was turned in at the POE (point of entry)? If so, you will have to do what is necessary to get new originals (ordering birth certificates, etc).

Claudeth applied for her card after she was in-country for two weeks. She showed them her passport with the visa and the I-94. She received the card about a week later. After we were married we went back and they told us they would need a valid document from the USCIS to change her name on the card so when she got her EAD we went back. It took about six weeks to get the new card.
