He probably said yes because you stated your employer letter is dated 3021 which would need a redo. He’s a stickler for literal interpretation of details.
 

Three months old is nothing. And if your employer letter says you make sufficient income, you don’t even need a bank letter or anything else for a London K1 interview. They have passed many on that one document. If you present one tax return, that will do instead. London does not need to see income proven five diffferent ways. They are real easy on K1s.

Yes, I’m working on it and will be signing it and sending it to my fiancé this week so he has it for the interview. Thank you for your time and help on my questions! Just can’t wait to be past this point. Everything has taken so long and has been such a struggle trying to see each other that I am numb to it all and what’s happening anymore lol

Yes it is a difficult time. We would like to see the relatives in England or have them come here, but it just hasn’t worked out. The greencard hassle once he arrives and you marry will take a long time, but at least you will be together. 
 

Once you get that Affidavit of Support with proof of income AND your new letter of intent off to him, you need to turn your attention to learning about the Adjustment of Status (AOS) because the sooner you get that rolling, the sooner he can work and get a driver’s license. My wife had all our AOS/EAD/AP filled out except for a few blanks before I even arrived on my K1 visa. I self sponsored my K1 and stopped at the Bank on the way to my interview to get a printout.

 

Now I am not saying you need to do that but with simple information to get at no cost when the current data will be x months old why not?

 

Self sponsoring a K1 at London seems a much easier option.

What do I DO with the I-134 specifically? My fiancé has prepared it along with the required evidence - do I just have her send it to me via email and take it with me to the interview? Or does it need to be filed somewhere also?

It goes to the interview with you. They have accepted emailed copies. K1s do not upload any of their documents ahead of time.
