Can I cross border patrol checkpoints in Texas with pending AOS packet?

We encountered border patrol a couple of weeks back on the way back from Mexico. The car in front of us was held a little, while the officer reviewed the documentation that was handed over and let go. When we pulled up to the officer and I rolled down the window, he asked “is everyone in your car a US citizen?” but before I could say anything, he waved us on. 

i found this an interesting read about when encountering border patrol. About half way down his story…

In the first week my wife and stepdaughter were here we hit a Border Patrol checkpoint on a county road in Imperial County California.  Sightseeing the desert seemed fun for Filipinas.  My wife became flustered and gave a completely nonsensical answer to when questioned where she was from.  The border patrol officer was perfectly nice though and just looked at their visas.   Then a month later we hit a Border Patrol checkpoint in Arizona on Highway 95 north of Yuma.  The girls wanted to see Saguaro cactus.  Border patrol was perfectly nice there too but did check their visas again.  They also knew I was driving a rental car without even asking.  No one ever looked at my ID so I assume I look all American.

Hopefully you submitted an I-485, not just an I-864.  It is the receipt notice for the I-485 that serves as proof that an intending immigrant is authorized to stay in the US.
