Hello guys, I applied for adjustment of Status for my wife and I just got an RFE letter saying that I do not meet the 125% income threshold. I made 41K and for a household of 2, the limit says 17K. I sent my 2020 tax transcript as evidence. What kind of evidence would they be looking for?

That is exactly how current income is calculated.  Tax transcripts are evidence of past income.   @pushbrk

Only need one (most recent pay stub reflecting a full pay period).  Take the gross for the period times the number of periods in a full year.  X52 for weekly or X26 for every two weeks is the most common.  So a thousand a week as 52,000.  By the same token, if you lost your job yesterday, your current income is zero, no matter what you made last year or so far this year.

Facts are cheap...knowing how to use them is precious...
