The social security offices in my state are in a perpetual state of closure (with covid as the excuse), and it's practically impossible to get an appointment. 

 

We are considering applying for the SS# instead, during the i-485, which is a newly introduced process. But with the long delays for AOS, we are curious how long it will actually take to get a SS card? The USCIS website makes it seem that a SS# will not be issued until the AOS is approved, which obviously could take 1+ years at this rate.

You can request a SSN card when you apply for EAD.  Form I-765.  That is currently taking around 8 months to process.

Apply for EAD thru i765 and i485 both. When your SSA allows walk ins, go there and apply for it as well. You will get SSN whichever is approved/allowed faster.

(Provided it is not passed day 76 of entry on K1 as one won't be issued after that).
