On October 12th , checking my fiances visa status it said “ready” and i checked today it said “ready” still but case last updated on nov 4, 2021 (today). What does that mean? Can I schedule his appointment at Mexico City already, or do i need to wait for the interview letter? Anybody who has recently traveled to Mexico City for the k1 visa interview… please let me know. Also, the approval notice is valid until November 11th.

Once you’re in ready you just have to wait for the email with your interview date. When it says your case was last updated, that could mean they just simply looked at it. Ours updated like that too while we were waiting for the email.
