Hello I was wondering will my AOS get recheck again 1 year later or new fiscal year my wife pass her interview as of Feb 2021 but there a visa ban in Laos so there is no issue of visa and it coming to a new year when they do issue a visa will they check for a AOS again ive change Job and do not make as much as before thanks in advance.

yes,  they will require a new AOS with updated information

they also will need a new medical exam as the visa,  itself ,  expires 6 months from date of exam

they will need the current IRS transcripts as in February 2021 ,  you only had to show 2019 

so 2020 if before 4/15/ 2022 and 2021 if after 4/15/2022

Thanks I was concerned about that now I will have to figure how I'm gonna fill in the gap

Fill what "gap"?  Complete a new affidavit of support with current information and current documentation.

When my wife went in for her interview in Feb of this year we used the 2020 tax transcript I made over the required income for the state of Alaska if they require a new AOS tran script when the visa is finally issued in a new year  I don't think I meet the required income ATM I gotta fill in the gap with asset or more income somehow

What you do, depends on the actual circumstances.  Only if you are self employed, does your "current income" come from a tax return.  For an "employee" it comes from a current pay stub.  Please explain the details of your concern, as the number from a tax transcript may not be the determining issue in your case.
